Kake Udon

... Tama udon is prepared by pouring hot soup (dashi in Kansai) over warmed udon noodles, using strong soy sauce for 'kake udon' in Kanto and light soy sauce for 'su udon' in Kansai. In the past, pepper and plum were the standard condiments, but now chopped green onions and shichimi togarashi are used. Using this as a base, various ingredients are added to make udon noodles such as shitsuku, tamago toji, kitsune (shinoda), or with kudzu bean paste or curry powder, to make thickened dishes such as ankake, kakitama, and curry....
