This refers to sugar that has been boiled down to the point where it is about to burn. It has a slight bitterness and dissolves easily in water. Most commercially available products in Japan are made by converting starch from raw sweet potatoes or kiriboshi (dried dried sweet potatoes) into acidic sugar, heating it to 150-180°C, allowing it to cool, and neutralizing it with alkali. There is also an alkali roasting method in which ammonia is blown in and heated. Some products use molasses or sugar in addition to starch. Caramel made from glucose is used in soy sauce and sauces, while caramel made from sugar is used in confectionery, beverages, and as a coloring agent in whiskey, brandy, and other drinks. By boiling sugar and water and taking advantage of the increasing temperature, a variety of candies can be made. If cold water is placed in a glass and the boiled sugar liquid is dropped into it, the changes that occur will produce a variety of candies. This is called the cold water method.
