...During the Muromachi period, words such as kou no mono (fragrant food) and narazuke appeared. The former is thought to have originally referred to miso-zuke (pickled vegetables) because miso is also known as kou (fragrant food), but it came to be used as a general term for pickles, and was also called koukou (fragrant food), shinkou (new fragrance), okoukou (pickled vegetables), and oshinkou (pickled vegetables). The latter is thought to have been a name used to distinguish kasuzuke from Nara, a region famous for its sake, from kasuzuke from other regions, but it soon became another name for vegetable kasuzuke. ...
