Shallot - échalote (English spelling) French

A perennial plant of the lily family (APG classification: Amaryllidaceae). Its English name is shallot. It is a type of onion, with small bulbs about 3 cm long, reddish brown skin, and several bulbs inside. The leaves are cylindrical and thin, 5 mm in diameter and 15 to 30 cm long. It rarely blooms, but in summer it produces flower stalks similar to onions and produces white flowers, but it does not bear fruit, and the above-ground parts die and go dormant in summer. If it is divided and planted in autumn, the leaves and the whole young bulb can be harvested in winter. Mature bulbs can be harvested after May of the following year. Most shallots sold in Japan are blanched rakkyo, which is in the same genus as shallots.

Also known as the Belgian shallot, it is often used as a spice in French cuisine. It has a strong, pungent odor similar to that of onions and garlic, and its bulbs are grated or finely chopped and used to flavor potages, gravies, white stews, etc. The young leaves are also soft and used in salads as a flavoring.

ユリ科（APG分類：ヒガンバナ科）の多年草。英名はシャロット。タマネギの一系統で、鱗茎(りんけい)は長さ約3センチメートルと小さく、外皮は赤褐色、中は数球に分球している。葉は円筒形で細く、径5ミリメートル、長さ15～30センチメートル。開花はまれで、夏にタマネギに似た花茎を出し、白い花をつけるが、結実せず、地上部は枯れて夏期は休眠する。秋に分球して植え付けると冬には葉や若球全体を収穫できる。成熟した鱗茎を収穫する場合は、翌年の5月すぎとなる。日本でエシャロット（エシャレット）と称して売られているものは、ほとんどがエシャロットと同属のラッキョウを軟白したものである。

　ベルギー・エシャロットともよばれ、香辛料としてフランス料理によく使われる。オニオンやガーリックと同じような強い刺激臭をもち、その鱗茎(りんけい)をすりおろしたり、細かく刻んでポタージュやグレービーソース、ホワイトシチューなどの香味づけに用いる。若葉も柔らかく香味野菜としてサラダにも使う。
