The 10th century Wamyōshō uses the character souri and reads it as mugisukui, referring to a basket for boiling wheat ropes, while the 15th century Gegakushū reads souri as ikaki and refers to a miso strainer. Even today, it is called ikaki in Kyoto and Osaka and zaru in Tokyo, but it is said that the origin of the word ikaki comes from yukake (a boiled water poured over a bowl of water) and zaru comes from souri....
