Sugar made from the sap of sugar maples, also known as maple sugar. Sugar maples are tall trees planted in Canada and the northeastern part of North America. In early spring, several holes about 1 cm in diameter and 4 cm deep are drilled into the trunks, tubes are inserted, and tin cans are hung from the ends. Within about three weeks, 50 to 100 liters of sap containing 3 to 5% sugar can be obtained from one tree. This is concentrated to produce maple syrup, and then evaporated to produce maple sugar. Maple sugar has a pleasant honey-like flavor and is prized as table sugar and as an ingredient in confectionery, but because it is expensive, most commercially available sugar these days is made by adding artificial flavorings such as maple syrup to ordinary sugar. サトウカエデの樹液から作られる砂糖で,別名メープルシュガーという。サトウカエデはカナダ,北アメリカの北東部に植林されている高木で,初春のころ,樹幹に直径1cm,深さ4cmくらいの穴を数ヵ所あけて,管をさし込み,その先端にブリキ缶をつるす。1本の木から3週間くらいの間で,3~5%の砂糖を含む樹液が50~100l得られる。これを濃縮して,メープルシロップ,さらに蒸発濃縮して,メープルシュガーを得る。メープルシュガーははちみつのような良い風味をもつのでテーブルシュガーおよび菓子原料用に珍重されるが,高価なために,最近は普通の砂糖にメープリンなどの人工香料を加えたものが市販のほとんどである。
