Sugar made from the sap of sugar maples, also known as maple sugar. Sugar maples are tall trees planted in Canada and the northeastern part of North America. In early spring, several holes about 1 cm in diameter and 4 cm deep are drilled into the trunks, tubes are inserted, and tin cans are hung from the ends. Within about three weeks, 50 to 100 liters of sap containing 3 to 5% sugar can be obtained from one tree. This is concentrated to produce maple syrup, and then evaporated to produce maple sugar. Maple sugar has a pleasant honey-like flavor and is prized as table sugar and as an ingredient in confectionery, but because it is expensive, most commercially available sugar these days is made by adding artificial flavorings such as maple syrup to ordinary sugar.
