Grated daikon, wasabi, etc. Grated daikon is used as a condiment, as well as in salads, soups, and simmered dishes, and is also called mizore-ae or mizore-shitate. Grated wasabi is used as a condiment with sashimi, or mixed with soy sauce or vinegar to make salads. Grating is thought to have been practiced since ancient times, but its first appearance in literature dates back to the late Muromachi period, around the time of the Hochou Kikaki. ダイコン,ワサビなどをすりおろしたもの。おろしダイコンは薬味のほか,あえ物,汁,煮物などに用い,みぞれあえ,みぞれ仕立てなどとも呼ぶ。おろしワサビは薬味として刺身などに添えたり,しょうゆや酢と合わせてあえ物に使う。おろしは古くから行われていたと思われるが,文献上に見られるのは室町後期の《庖丁聞書》あたりからである。おろしをつくる器具は《日葡辞書》に〈Daicon voroxi〉というのが見えるが,ほかではおおむね,わさびおろしと呼ばれている。
