French cuisine has long dominated Europe, and in most countries, large kitchens have the following division of duties, based on the organization established by the great chef Auguste Escoffier (1846-1935) at the end of the 19th century: meat dishes and their sauces are handled by the saucier, fish dishes and their sauces are handled by the poissonnier, while roasting, grilling and deep-frying meat, fish, poultry and wild game are handled by the rôtisseur. Vegetable dishes, potages and egg dishes are handled by the entremétier, purchasing, storing and preparing ingredients and cold hors d'oeuvres are handled by the garde-manger, and sweets and desserts are handled by the pâtissier (who may not be counted among the chefs in some cases).
