It seems to have originated from the infusion of salted fish and shellfish that has been used as a seasoning since ancient times in the areas from Southeast Asia to southern China. In the area around Xiamen, Fujian Province, China, this fish sauce is called ketchup, and there are similar words in various places. Perhaps this was transmitted, as 18th and 19th century British cookbooks describe various types of ketchup made with oysters, mushrooms, walnuts, cucumbers, as well as fish and berries, salt, sake, spices, etc. …
