When iodine chloride is applied to fats and oils, the amount of iodine chloride absorbed by 100 g of fats and oils is converted to iodine and expressed in grams. It is also called the iodine number. Generally, when iodine is applied to fats and oils, two iodine atoms are added to each double bond, so the degree of unsaturation of the fats and oils can be indicated. The iodine number may be slightly lower than the theoretical value depending on the position of the unsaturated bond in the fat and oil molecule, such as when there is a conjugated double bond or when the double bond is close to the COOH group, but it is widely used as a method to check the average degree of unsaturation of fats and oils.

油脂に塩化ヨウ素を作用させたとき，油脂100gに吸収される塩化ヨウ素の量をヨウ素に換算してグラム数で示したもの。ヨード数ともいう。一般に油脂類にヨウ素を作用させると二重結合一つに対しヨウ素2原子が付加するので，油脂の不飽和度を示すことができる。共役二重結合がある場合や，二重結合がCOOH基の近くにある場合など，油脂の分子内の不飽和結合の位置などにより，ヨウ素価は理論値よりやや低い数値となる場合があるが，油脂類の平均の不飽和度を調べる方法として広く用いられている。
