〘Noun〙 ("Kan" is the Chinese pronunciation of "jelly")① A type of stick-shaped dish. Its original form is the Chinese mutton jelly (atsumono) . It was introduced to Japan long ago along with Zen Buddhism, but in Japan it was made into the shape of mutton liver using red beans as the main ingredient, steamed, and served in soup. Later, it began to be served steamed as a tea snack, which was the beginning of steamed yokan, and the kneaded yokan commonly seen today, made by mixing sugared bean paste with agar and simmering it , was invented during the Edo period. There are chestnut yokan, persimmon yokan, mizu yokan, potato yokan, etc. *Teikin Orai (around 1394-1428) "Dim sum person (abbreviation) yokan. Donkey intestine jelly. 〘名〙 (「かん」は「羹」の唐音)① 棹物の一種。中国の羊肉の羹(あつもの)を原形とするもの。古くは禅宗文化とともに渡来したが、日本では小豆を主原料として羊の肝の形につくって蒸し、汁に入れて供された。後、蒸し物のまま茶菓子として供されるようになったのが蒸し羊羹の始まりで、今日ふつうに見られる、砂糖を加えた餡(あん)に寒天を混ぜて煮つめた練り羊羹は、江戸時代につくられた。栗羊羹、柿羊羹、水羊羹、芋羊羹などがある。※庭訓往来（1394‐1428頃）「点心者〈略〉羊羹。驢腸羹。猪羹」② 「ようかんいろ（羊羹色）」「ようかんがみ（羊羹紙）」の略。※内地雑居未来之夢（1886）〈坪内逍遙〉一「其色羊羹(ヤウカン)に近づきたるに」③ 羊羹紙でつくったタバコ入れ。江戸の江戸橋で売り出された。〔随筆・嬉遊笑覧（1830）〕④ 煉瓦を縦に半分に切ったものをいう。
