Yuzu (Citrus junos Sieb.ex Tanaka)

Japanese: ユズ(柚∥柚子) - ユズ（英語表記）Citrus junos Sieb.ex Tanaka

An evergreen tree of the Rutaceae family, it is a typical citrus fruit used in Japan as a seasoning (illustration). It was formerly called Onitachibana due to its rough surface. The Chinese name "Yuzu" has been corrupted to mean Pomelo. It grows upright and becomes a fairly large tree. The leaves are small and winged. The flowers are solitary with five petals and bloom in May. The new shoots and flowers are slightly purple. The fruit is oblate and weighs around 100g. It is yellow and fragrant. The flesh is soft and juicy, but the juice yield is 15-20% of the fruit weight. It has a strong sour taste, containing about 6% acid, most of which is citric acid.

ミカン科の常緑樹で，日本の代表的調味用かんきつ類（イラスト）。果面が粗いことから古くはオニタチバナと呼ばれた。中国名の〈柚〉は転訛（てんか）して現在はブンタンをさす。直立性でかなり大木になる。葉は小さく翼葉がある。花は単生で5弁花が5月に咲く。新芽，花はわずかに紫色を帯びる。果実は扁球形で100g前後。黄色で芳香がある。果肉は柔軟多汁だが，搾汁率は果実重の15～20％。酸味強く，約6％の酸を含み，その大部分はクエン酸である。
