Mature rice kernels are enclosed in the husk. Rice with the husk still attached is called husk, or husk rice. If the husk is removed from this, it becomes brown rice. A rubber roll type rice huller is used to remove the husk; as the rice passes between two rubber rolls, the husk comes off as it rubs against the grain. The proportion of brown rice removed from the rice is called the husk ratio, and is usually 75-85% by weight and 50-60% by volume. In rice-producing countries around the world, rice is generally stored in the form of husk, and in the United States it is stored in bulk in large silos. 稲の成熟した穀粒はもみ殻(稃(ふ))で包まれている。もみ殻をもったままの米をもみ,あるいはもみ米という。これからもみ殻を除けば玄米となる。もみ殻を取り除くのにはゴムロール式のもみすり機が使われており,2本のゴムロールの間をもみが通るとき,すれてもみ殻がはずれるしくみになっている。もみから玄米をとる割合をもみすり歩合といい,重量では75~85%,容量では50~60%となるのが普通である。 世界の米産国では米はだいたいもみの形態で貯蔵されており,アメリカでは大きなサイロでばら貯蔵が行われている。
