A board used to cut ingredients for cooking. The Wamyōshō records that the pronunciation of the word '忎' is 'So', and the Japanese name is 'Manai-ta'. Later, it came to be written as '真魚板' or '魚板'. In ancient Japan, all fish and vegetables were called 'Na', and fish alone was called 'Mana'. This name comes from the fact that this board is used to cut up the 'Mana'. In the past, boards with legs, and often four legs in particular, were used. When schools of cooking were established in the Muromachi period, each school prescribed the dimensions of the cutting board, the famous spots on the board (nado-goro), and the etiquette for holding a cutting board in front of nobles to demonstrate their fish and bird knives.

料理の材料を切るときに用いる板。《和名抄》は〈俎〉を,音は〈阻(ソ)〉,和名は〈末奈以太(まないた)〉としている。のちに〈真魚板〉〈魚板〉とも書くようになった。日本では古く魚菜のすべてを〈な〉と呼び,さらに魚だけを〈まな〉と呼んだ。その〈まな〉を切り分けるための板であるところからこの名がある。昔は脚付き,それも4本脚のものが多く使われた。室町期に料理の流派が成立すると,流派それぞれがまないたの寸法,板面の名所(などころ),貴人の前で魚鳥の包丁を披露するためにまないたを持って出るときの作法などというものを規定した。
