Classified as a cherry salmon, it is a member of the salmon family. However, in Tokyo, pink salmon, which tastes less good, are commonly called trout, and cherry salmon are called honmasu, so the name is confusing. Other salmon fish with the name trout include kokanee, rainbow trout, brook trout, and chinook salmon. It is generally believed that salmon and trout can be clearly distinguished, but the difference between the two is unclear, as seen in the case of the landlocked form of sockeye salmon, called kokanee. Cherry salmon, which is representative of trout, is distinguished by the landlocked form being called yamame. It is 60 cm long and very similar to salmon, but has fewer pyloric caeca and gill rakers. It is found in areas north of the Tone River on the Pacific coast, on the Sea of ​​Japan coast, and in Kumamoto Prefecture. They descend to the sea 1 to 2.5 years after hatching, spend about 1 to 2 years in the sea, and then swim up the rivers to spawn in late spring to early summer. It is caught using fixed nets and gill nets, and is salted, or enjoyed grilled with salt, meunière, or as sashimi.

分類上はサケ科のサクラマスのこと。しかし東京ではやや味の落ちるカラフトマスをマスと俗称し,サクラマスをホンマスと呼ぶなど,名称は混乱している。他にマスの名のつくサケ科の魚にはヒメマス,ニジマス,カワマス,マスノスケなどがある。一般にサケとマスは明確に区分できると思われがちだが,ベニザケの陸封型をヒメマスというように,両者のちがいは定かでない。マスを代表するサクラマスは,陸封型をヤマメと呼んで区別する。全長60cm,サケとよく似るが幽門垂,鰓耙(さいは)の数が少ない。太平洋側の利根川以北,日本海側および熊本県などに分布。孵化(ふか)後1〜2年半で海に下り,約1〜2年を海で過ごして晩春〜初夏,産卵のため川をさかのぼる。定置網,刺網などで漁獲され,塩蔵するほか,塩焼き,ムニエル,刺身などで賞味する。
