In fruits such as red apples and peaches, as they approach ripening, the chlorophyll breaks down and a red pigment called anthocyanin is produced instead. However, because light is required for the production of anthocyanin, in order to color them red, the bags must be removed and the fruit exposed to light 10 to 40 days before harvest for apples and 3 to 10 days for peaches.
