Invert sugar - Tenkato

When sucrose (+66.5°) is hydrolyzed with dilute acid or enzymes, it becomes a mixture of D -glucose (+52.6°) and D -fructose (-92.8°). During this process, the optical rotation changes from dextrorotatory to levorotatory (-20°), a change called inversion, and the resulting sugar mixture is called invert sugar. It gives a different taste to sucrose, is difficult to crystallize, but is easily absorbed, so it is used in food manufacturing as a nutritious substance, seasoning, etc. Honey contains 60-90% invert sugar.
