It is self-fertilized and the caryopsis is fully ripe about 30 days after flowering. The caryopsis is the smallest of the grasses, about 1 mm long, exposed when mature, and somewhat shedding-prone. It is rich in protein and contains a lot of ash, calcium, iron, etc. Native to Ethiopia, it was introduced to India long ago and is cultivated only in these two regions. There are many varieties, which are divided into reddish purple and white varieties depending on the color of the berry. In Ethiopia, the kernels are ground into flour in a mortar, kneaded with a small amount of water, left to ferment for a day, and then made into a thin bread called injera by adding butter.
