Tef - tef (English spelling)

It is an annual grass of the family Poaceae (APG classification: Poaceae). It grows to a height of 0.3-1.5 meters. It tillers abundantly and has long, slender leaves. The panicles appear in summer and have long stalks. The spikelets consist of 4-9 florets and are 5-10 mm long. The outer lemma is 3-3.5 mm long, and the inner lemma is 1-2 mm long. It is self-fertilized and the caryopsis is fully ripe about 30 days after flowering. The caryopsis is the smallest of the grasses, about 1 mm long, exposed when mature, and somewhat shedding-prone. It is rich in protein and contains a lot of ash, calcium, iron, etc.

Native to Ethiopia, it was introduced to India long ago and is cultivated only in these two regions. There are many varieties, which are divided into reddish purple and white varieties depending on the color of the berry. In Ethiopia, the kernels are ground into flour in a mortar, kneaded with a small amount of water, left to ferment for a day, and then made into a thin bread called injera by adding butter. It has a distinctive strong aroma and sour taste and is eaten regularly.

イネ科（APG分類：イネ科）の一年草。草丈は0.3～1.5メートル。よく分げつし、葉は細長い。穂は夏に出て、長い枝柄をもつ。小穂は4～9個の小花からなり、長さ5～10ミリメートル。外穎(がいえい)は3～3.5ミリメートル、内穎は1～2ミリメートル。自家受精し、開花後30日ほどで穎果が完熟する。穎果はイネ科のものでは最小で、長さ約1ミリメートル、成熟すると露出し、やや脱粒性がある。タンパク質に富み、灰分、カルシウム、鉄などが多く含まれている。

　エチオピア原産で、古くインドに伝わり、この両地域に限って栽培されている。多くの品種があり、穎果の色によって、赤紫色の品種群と白色の品種群とに分けられる。エチオピアでは粒を臼(うす)で粉にひき、これに水を少量加えて練り、1日放置して発酵させ、バターなどを加えて、インジェラinjeraと称する薄焼きパンにする。特有の強い香りと酸味があり、常食とされる。
