This oil is extracted from soybean seeds mainly by solvent extraction. It is mainly produced in the United States, and is widely consumed in both the United ^States and Japan. The oil content of the beans is 15-23%. Melting point is _-7 to -8° ^C , specific gravity d415 = 0.922-0.934, refractive index nD20 = 1.472-1.478, saponification value 193-195, iodine value 114-138, acid value 0.3-3.0. The fatty acid composition is linoleic acid 51-55%, _oleic acid 22-25%, palmitic acid 10-12%, linolenic acid 8-9%, stearic acid 3-4%, etc.
