Auctions are a standard way of buying and selling fresh food at wholesale markets, where two or more buyers compete against one seller and sell to the highest bidder. There are two types of auctions: auctions where the buyers bid higher, and auctions where the sellers bid lower. Auctions where the buyers bid higher, and auctions where the sellers bid lower, are also called Dutch auctions because they were used in some parts of the Netherlands and Belgium, and are limited to special items and special cases (such as bananas sold on the street). 1人の売手に対し2人以上の買手が相互に値段を競い合い,最も高値を付けた買手に売ることを〈せり売り〉といい,卸売市場での生鮮食料品の標準的な売買仕法である。せり売りには買手が値をせり上げていく〈せり上げ〉と,売手が値をせり下げていく〈せり下げ〉があるが,せり下げはオランダ,ベルギーなど一部で行われたところから,別名オランダぜりDutch auctionと呼ばれるように,特殊な物品,特殊なケースに限られる(街頭のバナナ売りなど)。
