A perennial plant of the Umbelliferae family. It is widely distributed from the temperate zone to the tropics of East Asia, and grows in wetlands, rice fields, and flowing water throughout Japan. It reproduces by long, horizontal, white underground stems that grow upright and reach a height of about 30 cm. It has alternate leaves that are pinnately divided once or twice. In summer, compound umbels appear at the ends of the branches, and bear many small white flowers with five petals. The whole plant has a unique fragrance, and it is one of the seven herbs of spring, and is sometimes cultivated in rice fields. Young stems that have just begun to grow are picked and eaten from winter to spring. They are used in soaked dishes, salads, and soups.
