Noodle making - Seimen
The process involves adding salt water to wheat flour, kneading it, rolling it with rolls to form a noodle sheet, and cutting it lengthwise with a cutting blade (a pair of rolls with blades) to produce linear noodles. Mechanization of noodle making began when Masaki Teruo completed a practical machine in 1883. Noodle making machines have since been improved to become larger, more continuous, and more labor-saving, and are still in use today. To make noodles in a factory, salt water is added to wheat flour and kneaded in a mixer to make a dough similar to soybean pulp. The dough is put through a rolling machine consisting of a pair of smooth rolls to make two rough noodle sheets (rough rolling), and the two sheets are then put together and rolled (compounded) to make a thick noodle sheet.

小麦粉に食塩水などを加えてこね混ぜ,ロールで圧延してめん帯とし,切刃(刃のついた1対のロール)で縦に切って線状のめんを製造すること。製めんの機械化は真崎照郎が1883年に実用的な機械を完成させたことに始まる。製めん機はその後,大型化,連続化,省力化の方向に改良され現在に至っている。工場における製めんは,小麦粉に食塩水を加え,ミキサーでこねて,おから状の生地とする。生地を1対の滑面ロール2台からなる延機(のべき)にかけ,2枚の粗めん帯とし(荒延(あらのべ)),2枚を合わせてロールにかけ(複合),厚いめん帯をつくる。
