A pale blue-green discoloration of tuna meat that occurs when the meat is heated. It is also called green meat. Pale-colored tuna such as albacore are mainly exported to the United States as a canned food ingredient. When these tuna are steamed during the canning process, the flesh, which should be a light pale red, sometimes turns pale green to gray-green or abnormally dark. マグロ類を加熱したときに生ずる淡青緑色の変色肉。グリーンミートともいう。ビンナガなど肉色の淡いマグロは缶詰原料として主にアメリカに輸出されている。缶詰製造時にこれらのマグロを蒸煮すると,本来明るい淡赤色になるはずの肉が,ときに淡緑色から灰緑色を呈したり,異常に暗い色調になることがある。アメリカでは,これをgreen color,dead colorあるいはdark colorと称し,格外の不良品としている。
