A pale blue-green discoloration of tuna meat that occurs when the meat is heated. It is also called green meat. Pale-colored tuna such as albacore are mainly exported to the United States as a canned food ingredient. When these tuna are steamed during the canning process, the flesh, which should be a light pale red, sometimes turns pale green to gray-green or abnormally dark. In the United States, this is called green color, dead color, or dark color, and is considered to be a defective product. Source: Heibonsha World Encyclopedia, 2nd Edition Information |
