Chanterelle (Cantharellus cibarius Fr.)
A mushroom (illustration) of the Basidiomycete family of the Aphyllosteganaceae order that grows mainly in coniferous forests. It is an edible fungus with a beautiful egg-yellow color and excellent flavor. It is 3-8 cm tall and has a nearly circular cap about 3-8 cm in diameter with shallowly lobed and wavy edges. The stem is nearly cylindrical and often grows slightly off-center from the cap. The underside of the cap has radially arranged wrinkled folds, and spores are produced on its surface. The spores are oval, colorless, and smooth-surfaced. When this mushroom dries out a little, it gives off a smell similar to apricots, so in Nagano Prefecture it was called chanterelle.

主に針葉樹林内に生える担子菌類ヒダナシタケ目アンズタケ科のキノコ(イラスト)。全体に卵黄色,美しく風味すぐれた食用菌である。高さ3~8cm,かさは直径3~8cmほど,ほぼ円形で縁は浅く裂け,波をうつ。茎はほぼ円柱状,かさの中心から少しはずれてつくことが多い。かさの下側には放射状にならぶしわ状のひだがあり,その表面に胞子をつくる。胞子は楕円形,無色,表面なめらか。このキノコは少し乾いてくると,アンズに似たにおいがするので,長野県ではアンズタケとよんでいた。
