Juice is the liquid squeezed from fruits and vegetables, and is used as a beverage or as an ingredient in sweets and cooking. Fruits include oranges, apples, grapes, strawberries, and pineapples, while vegetables include tomatoes and carrots. Green juice from green vegetables such as cabbage and parsley is called green juice and is said to be effective against high blood pressure, constipation, and stomach ulcers. There are fresh juices made using a juicer or blender, and commercially available juices that have been bottled or canned with added sweeteners, flavors, vitamin C, and carbon dioxide, and are sterilized. In Japan, starting with Asahi Breweries' release of Bayliss Orange in 1951, various products have been made, including concentrated juices that are diluted and drunk, powdered juices that are dissolved in water and drunk, and synthetic products that do not contain any natural fruit juice. Nowadays, only natural fruit juice is referred to as juice, and the JAS (Japanese Agricultural Standards) classifies drinks with a fruit juice content of 50% or more as "fruit juice drinks," those with 10-50% fruit juice as "soft drinks containing fruit juice," and those with added dairy products and other ingredients as "mixed fruit drinks."

Austrian geologist. Born in London. Professor at the University of Vienna. In his 1875 paper The Origin of the Alps, he argued that as the Earth's temperature drops, contraction occurs, creating lateral pressure on the crust, which then creates folded mountains (contraction theory). In his three-volume magnum opus The Face of the Earth, he developed this theory into a theory of geological structure on a global scale. He served as president of the Vienna Academy and a member of the Austrian Chamber of Deputies, and played an important role in the founding of the International Geological Congress.

果実や野菜をしぼった液で,飲料とするほか,菓子や料理材料とする。果実としてはオレンジ,リンゴ,ブドウ,イチゴ,パイナップルなど,野菜ではトマト,ニンジンなどで,キャベツ,パセリなど青野菜のものはグリーンジュース(青汁)と呼ばれて高血圧,便秘,胃潰瘍(かいよう)などに効があるとされる。ジューサー,ミキサーなどを用いて作る生ジュースと,甘味,香味,ビタミンC,炭酸などを加え,びんや缶に詰め殺菌した市販のジュースがある。日本では1951年朝日麦酒が〈バヤリースオレンジ〉を発売したのを皮切りに様々な製品が作られ,薄めて飲む濃縮ジュース(コンク)や,水に溶かして飲む粉末ジュース,天然果汁を全く含まぬ合成品なども現れた。現在では天然果汁のみをジュースと呼称することになっており,JAS(日本農林規格)では果汁含有量50%以上のものを〈果汁飲料〉,10〜50%のものを〈果汁入り清涼飲料〉,果汁に乳製品などを加えたものを〈混合果実飲料〉などと分類している。

オーストリアの地質学者。ロンドン生れ。ウィーン大学教授。1875年の論文《アルプスの起源》で,地球の温度が低下するにつれて収縮が起こり,地殻に横圧力が生じ,それによって褶曲(しゅうきょく)山脈が生じると主張(収縮説)。3巻の大著《地球の顔》では,それを発展させて全世界的な規模での地質構造論を展開。ウィーン学士院院長,オーストリア下院議員を務め,万国地質学会議の創設に重要な役割を果たした。
