Mantis shrimp - Mantis shrimp
A crustacean of the Stomatopoda family (illustration). In a broad sense, it is also used to refer to the Stomatopoda in general. The mantis shrimp Oratosquilla oratoria is about 15 cm long. It is found from Hokkaido south to the coast of China, living on the sandy and muddy bottoms of inland bays. It is most common off the coast of Japan, where it is caught in large quantities and eaten along with other closely related species. When alive, its body surface is grayish-white with small dark dots scattered across it, but when boiled, it turns reddish purple, not red like shrimp or crabs.

口脚目シャコ科の甲殻類(イラスト)。広義には口脚類Stomatopoda一般を指す呼称としても用いられる。シャコOratosquilla oratoriaは体長15cmくらい。北海道以南~中国沿岸に分布し,内湾の砂泥底にすむ。日本沿岸にもっともふつうで,大量に漁獲され,他のごく近似の種類とともに食用とされる。生きているときは体表には灰白色の地に暗色の小点が散在しているが,煮るとエビやカニのように赤くならずに赤紫色になる。
