EC 4.1.2.13. An enzyme that catalyzes a reversible aldol condensation reaction. It has very high specificity for dihydroxyacetone phosphate, but low specificity for aldehydes. Substrates that are decomposed include D -fructose 1,6-diphosphate, L -sorbose 1,6-diphosphate, and D -sedoheptulose 1,7-diphosphate. Of these, it acts on D -fructose 1,6-diphosphate to produce dihydroxyacetone phosphate and glyceraldehyde 3-phosphate. It is an important enzyme in the glycolysis or alcohol fermentation pathway. It is present in yeast, animal, and plant tissues, and has been crystallized from yeast and rabbit muscle. Some of these enzymes contain zinc Zn and are inhibited by chelating agents, while others do not contain zinc and are not inhibited by chelating agents.
