It is a type of deep-fried dish in which chicken, beef, pork, fish, shrimp, crab, etc. are pre-cooked along with vegetables, tossed in white sauce, and then formed into a cork-shaped container and deep-fried.

The name is said to come from the British game croquet. It is a game in which a ball is rolled, but the rolling ball is made of wood with a handle, and the part that hits the ball is shaped like a cork. There are two types of croquettes, with different binders. One is a Western-style dish made with a white sauce base, and the other is a Japanese-style dish made with potatoes. The recipe for Japanese-style croquettes was introduced in the Western Cooking Guide published in 1872 (Meiji 5), but it didn't become popular until the early Showa period, and has since been widely enjoyed in ordinary households.

鶏肉、牛肉、豚肉、魚、エビ、カニなどを野菜とともに下調理し、ホワイトソースで和(あ)えて、コルク栓形にして揚げた揚げ物料理の一種である。

 名はイギリスのクロッケーcroquetというゲームに由来するといわれている。球(たま)を転がすゲームだが、転がすのに用いるものは木製で持ち手があり、球を打つところがコルクの栓をかたどってつくられている。コロッケには2種類あり、つなぎが違う。一つはホワイトソースを土台としてつくった洋風料理で、他はジャガイモをベースにした日本風のものである。日本風のコロッケは、1872年(明治5)刊の『西洋料理指南』にその調理法が紹介されているが、普及したのは昭和初期で、以来、一般家庭で広く親しまれている。
