Kohlrabi
Also known as kolabi, corm candi, or turnip candi. A vegetable of the Brassicaceae family closely related to cabbage. Native to the Mediterranean region, it was introduced to Japan during the Meiji period. The edible part is the stalk at the base of the leaves, which swells into a sphere. The outer skin can be white, light green, or reddish purple. It is harvested when the bulb is 4-5 cm in diameter and used in vinegar pickles and salads.
