Also known as cinnamaldehyde. An aromatic unsaturated aldehyde. The carbon-carbon double bond has a trans configuration. It is the main component of cinnamon oil and has a strong cinnamon odor. It is a pale yellow liquid with a melting point of -7.5°C and a boiling point of 129°C (20mmHg). It is synthesized by aldol condensation of benzaldehyde and acetaldehyde in the presence of an alkaline catalyst. Cinnamic aldehyde is miscible with most organic solvents, including ethyl alcohol, ether, and chloroform. It is insoluble in water. It is easily oxidized with air to form cinnamic acid. シンナムアルデヒドともいう。芳香族不飽和アルデヒドの一つ。炭素‐炭素二重結合の立体配置はトランス型である。ケイ皮油の主成分で,強いケイ皮臭をもつ。淡黄色の液体で,融点-7.5℃,沸点129℃(20mmHg)。ベンズアルデヒドとアセトアルデヒドを,アルカリ触媒の存在下でアルドール縮合して合成する。ケイ皮アルデヒドは,エチルアルコール,エーテル,クロロホルムなどほとんどの有機溶媒と混合する。水に不溶。容易に空気酸化され,ケイ皮酸となる。
