<br /> A type of green tea. It can be steamed or kettle-brewed. Steamed tea is made in the same way as sencha, but the finishing process involves removing the moisture while also kneading and shaping the leaves, and instead of shaping them into thin, straight leaves, they are shrunk into round shapes. Kettle-brewed tea is made by heating the leaves in a kettle instead of steaming them immediately after picking to prevent fermentation, and the finishing process is the same as for steamed tea. Ureshino in Saga is well known, and there are several other production areas in Kyushu. It is characterized by little astringency and a mellow taste. ◇It is also called "Guri tea", but "Guri tea" often refers to steamed tea.

緑茶の一種。蒸し製と釜いり製があり、蒸し製は、煎茶と同様に作るが、水分を除きながらもみほぐして形をととのえる仕上げの工程で、細くまっすぐにととのえないで丸く縮ませるもの。釜いり製は、茶葉に発酵が生じないよう摘採後ただちに行う加熱の工程を蒸さずに釜でいって行い、仕上げの工程は蒸し製と同様に行うもの。佐賀の嬉野(うれしの)のものが知られるほか、九州にいくつかの産地がある。渋みが少なく、まろやかな味わいが特徴。◇「ぐり茶」ともいうが、「ぐり茶」は蒸し製のものをいうことが多い。
