...Eventually, they came to be baked in iron molds, and flour-based senbei became more diverse as secondary ingredients such as eggs, miso, sesame and poppy seeds were added. Among the flour-based senbei today, kawara senbei and kamenoko senbei are named after their shapes, while egg senbei, azuki senbei and miso senbei are named after their secondary ingredients, and among them there is the Karurusu senbei (mineral spring senbei), which uses mineral spring water. Thinly baked senbei are eaten as is, or rolled up around a core of sugar candy, and are called makiginu or rolled silk, and have been famous as a specialty confectionery in Edo Yoshiwara since around the Hoei period (1704-11). ...
