A perennial plant of the Asteraceae family (APG classification: Asteraceae). Native to Southern Europe. It is said to be the prototype of the artichoke. The leaves have many thorns similar to thistles and grow to a height of 1.5 to 2 meters. The flowers are reddish purple. Seeds are sown in April, and from around October, the leaf stalks before they bolt are wrapped in straw and blanched for about half a month, and then used as a vegetable. Another method is to blanch the plant by piling up soil from spring. In Italy, the thalasso is also edible. It has spread to America and has become wild, but it is not cultivated or used in Japan.
