An essential oil. Also called cassia oil or cinnamon oil. When steam distilled from the bark of cassia (Lauraceae) grown in southern China, it can be obtained with an oil yield of 1.5%, from the twigs with an oil yield of 0.2%, and from the leaves with an oil yield of 0.54%. Its main component is cinnamaldehyde (cinnamic aldehyde) with a content of 85-95%, with the remainder being cinnamic acid and cinnamyl acetate. It is an important food flavoring, and is widely used in confectionery, bread, beverages, pickles, chewing gum, etc. It is also used as a soap flavoring, and is an important raw material for cinnamaldehyde.
