Ebiimo - Shrimp potato

Japanese: 海老芋 - えびいも

A regional brand of the Kinki region, Hyogo prefecture.
It is mainly produced in Himeji City. In the 1890s, it was cultivated in the Kaneda area of Himeji City. It is said that cultivation spread to stabilize income after typhoon damage to rice paddies. Initially, it was the second largest production area after Tondabayashi in Osaka, and was mainly shipped to Kyoto. Cultivation peaked in the 1950s. It is a type of taro, and is called shrimp potato because its striped pattern and curvature resemble shrimp. It is used in stews and fried dishes, and is also used in New Year's dishes as a lucky charm. It is a traditional vegetable of Hyogo.

主に姫路市で生産されている。明治30年代には姫路市兼田地区で栽培されていた。水稲の台風被害がかったため、所得安定の目的で栽培が広がったという。当初は大阪の富田林に次ぐ産地であり、主に京都へ出荷された。昭和30年代に栽培の最盛期を迎えた。里芋の一種で、縞模様と曲がり具合が海老に似ていることから海老芋と呼ばれる。煮物・揚げ物に利用され、縁起物としておせち料理にも使われる。ひょうごの伝統野菜。
