...Urushi is harvested from late June to late November. In Japan, the harvesting process (and the people who do it) is called "urushi-kaki" (scraping lacquer), and it is carried out by migrant workers from Noto in Ishikawa Prefecture, the Aizu region of Fukushima Prefecture, and northern Niigata Prefecture. The main harvesting method is the koroshigaki method, in which all the sap is harvested in a year, but there is also the yojogaki method, in which the sap is harvested for several years.
