〘名〙① 鰹の身を節どりして蒸し、火にあぶってから干し固めたもの。薄く削って、だしをとるのに用いたり料理にかけたりする。高知県、鹿児島県のほか静岡県焼津の産が有名。かつぶし。ほしがつお。かれがつお。※虎寛本狂言・察化(室町末‐近世初)「今朝も肴丁へいて干鯛、鯣、鰹節などを取て参た」② (①は固く、削って食用にするところから) 節義固く私欲を削って主君に仕える武士のたとえ。※仮名草子・よだれかけ(1665)一「よきさぶらひといふは、弓馬のみちをきはめ、義をみがき、信をさきとして、私欲の心をけづり〈略〉人にかつをぶしともいはる」③ (なまくら刀で①を削るところから) なまくら武士のたとえ。※雑俳・軽口頓作(1709)「はなれたる・肩に棒をくかつを武士」④ (「だし」に使うのをもじって) 口実にする事柄をいう。※談義本・つれづれ睟か川(1783)二「大三十日(おほみそか)のおけら参りは、手代こむすこのよき鰹節なれば、足をそらになし」
