〘Noun〙① Bonito flesh that has been stripped of its flesh, steamed, roasted over a fire, and then dried and hardened. It is shaved thinly and used to make soup stock or to sprinkle on dishes. It is famous for being produced in Kochi Prefecture, Kagoshima Prefecture, and Yaizu in Shizuoka Prefecture. Katsubushi. Hoshigatsuo. Kare-gatsuo. *Torahirohon Kyogen Sakka (late Muromachi period - early modern period) "This morning I have brought along dried sea bream, dried mackerel, dried bonito flakes, and other snacks for breakfast."② (① comes from the fact that it is hard and can be shaved and eaten) A metaphor for a samurai who is loyal and sets aside personal desires to serve his lord. ※Kanazoshi Yobikake (1665) 1 "A good warrior is one who has mastered the art of archery and horsemanship, honed his sense of righteousness, placed faith above all else, and cast away his selfish desires.
