[Vitamin A]
It is a fat-soluble vitamin discovered as an anti-night blindness factor, and exists naturally as retinol (vitamin A 1 ) and 3-dehydroretinol (vitamin A 2 ) and their derivatives. Vitamin A is unstable and undergoes changes such as isomerization, decomposition, and polymerization when exposed to air, light, heat, and acid.
