Thistle - Thistle
It is a genus of the Asteraceae family and has about 200 species, of which about 80 are native to Japan. Most are perennials, but some are biennials. It is widely distributed in the warm to cold zones of the Northern Hemisphere, growing from the coast to the high mountains. The leaves are sawtoothed or pinnately lobed, have sharp prickles, and some have dense goosebumps on the underside. The involucre consists of multiple rows of involucre segments, and the shape and arrangement of the segments often characterize the species. The flower heads consist of many tubular flowers, and most of them bloom in autumn. In addition to the magnificent Fuji thistle, Noa thistle has upright red-purple flower heads about 4 cm in diameter that bloom in spring and summer and are distributed south of Honshu. Onia thistle, which blooms from early summer to autumn, is found in the northern Chubu region and Tohoku region, and has drooping deep purple flower heads. Sea thistle, which grows on the sandy coasts of the Izu Islands and the Izu Peninsula on the Pacific coast, has upright flower heads and shiny leaves. In general, the roots of many species are edible, and Mori thistle in particular is cultivated, and its roots are called mountain burdock or chrysanthemum burdock and are pickled in sake lees. Ageratum, fox thistle, and artichoke are all separate genus from thistle.

キク科の一属で約200種あり,日本産はおよそ80種。ほとんどは多年草だが二年草もある。広く北半球の暖〜寒帯に分布し,生育地域は海岸から高山にわたる。葉は鋸歯(きょし)または羽状に裂け,鋭い刺針があり,裏面にくも毛を密生するものがある。総包は多列の総包片からなり,総包片の形や配列は種の特徴になることが多い。頭花は多数の筒状花のみからなり,多くのものは秋に開花する。壮大な草姿をもつフジアザミのほか,ノアザミは頭花が径4cmほど,紅紫色で直立し,春〜夏に咲き,本州以南に分布する。初夏〜秋に咲くオニアザミは中部地方北部,東北地方に生じ,濃紫色の頭花はうなだれる。伊豆諸島・伊豆半島以西の太平洋側の海岸砂地にはえるハマアザミは頭花が直立し,葉は強い光沢がある。一般に根の食べられるものが多く,特にモリアザミは栽培もされ,その根は山ゴボウ,菊ゴボウなどと呼ばれて粕漬にされる。なおカッコウアザミ,キツネアザミ,チョウセンアザミ(アーティチョーク)などはアザミとは別属。
