If we consider the appearance of the first cookbook written in French to be the starting point of French cuisine, it would be in the late Middle Ages. That is, it would be Le viandier (List of Foods) by Taillevent (1326?-95), who became the chief chef of Charles V. From the contents of this book, we can infer that medieval cooking was centered on stews, thick soups, and pies, and that a lot of purees were used, in which ingredients were mashed so that it was impossible to tell what they were, and then a large number of different spices were added.
