...Smoked meat and vegetable salads are the most commonly used, but traditionally Russians have prized sturgeon meat and its eggs (caviar), salmon roe, and salted or pickled herring. Most dishes are cold, but in some cases hot dishes made from flour, such as piroshki and bliny (a type of crepe), are served with Russian cuisine. Drinking vodka with appetizers is one of the characteristics of Russian cuisine.

...In the Russian Orthodox Church, Wednesdays and Fridays were fasting days, and long fasting periods were set before major festivals such as Easter and Christmas, during which eating meat was prohibited. Meat and eggs were foods for festivals, but on festivals and celebrations, pirog, a pie-like dish, bliny, and kut'ya, a dish made by mixing grains with honey and raisins, were also served on the table. Not only have religious taboos almost disappeared, but Russian food has become significantly more diverse, with European, Caucasian, and Central Asian cuisine being incorporated into daily life.
