① A type of Western confectionery. A dough made of flour, eggs, butter, milk, sugar, etc. is sandwiched between two iron plates with a lattice pattern and baked. The lattice pattern is on the baked waffle. A typical example is the "Belgian waffle," which is made by fermenting the dough with yeast, and there are Liege style and Brussels style. The former is a small oval with large and deep lattices, contains large sugar grains called pearl sugar, and is often eaten as is. The latter is a relatively large rectangle with fine and shallow lattices, and is often eaten with maple syrup or chocolate sauce, or with jam, fresh cream, fruit, ice cream, etc. There is also the "American waffle," which is made without yeast by raising the dough with baking powder, and has a relatively fluffy texture. It is a relatively large rectangle or circle with fine and shallow lattices, and is eaten in a way similar to the Brussels style. ◇It is also called "gaufre." Gaufre is a French word.
② A type of Western confectionery. Wheat flour, eggs, milk, sugar, etc. are mixed and baked into a small, fluffy oval shape like a sponge cake, with various creams, jams, bean paste, etc. sandwiched between them, then folded in half like a kashiwamochi. ◇It is said to be a Western confectionery unique to Japan. Tsunejiro Yonezu, the second son of Matsuzo Yonezu, who opened the Western confectionery shop "Yonezu Fugetsudo" (now Tokyo Fugetsudo) in Ryogoku, Sumida Ward, Tokyo, completed his training in the United States, London, and Paris from 1884 (Meiji 17) to 1890. After returning to Japan, he was inspired by wafers and came up with a dish of bean paste sandwiched between a castella-like dough, which he sold under the name waffles.

①洋菓子の一種。小麦粉・卵・バター・牛乳・砂糖などを混ぜて作った生地を、格子模様の凹凸のついた2枚の鉄板で挟んで焼いたもの。焼き上がったワッフルにはその格子模様がつく。代表的なものとして、イーストを用いて生地を発酵させて作る「ベルギーワッフル」があり、リエージュ風とブリュッセル風がある。前者は小型の楕円形で、格子が大きくて深く、パールシュガーという粒の大きな砂糖が入っていて、そのまま食べることが多い。後者は比較的大きな長方形で、格子が細かくて浅く、メープルシロップやチョコレートソースをかけたり、ジャム・生クリーム・果物・アイスクリームなどを添えたりして食べることが多い。また、イーストを用いず、ベーキングパウダーで生地をふくらませて作り、そのため比較的ふわふわとした食感のある「アメリカンワッフル」もあり、比較的大きな長方形または円形で、格子は細かくて浅く、食べ方はブリュッセル風に近い。◇「ゴーフル」ともいう。ゴーフルはフランス語。
②洋菓子の一種。小麦粉・卵・牛乳・砂糖などを混ぜ、スポンジケーキのようにふんわりと小型の楕円形に焼いた生地に、種々のクリーム・ジャム・あんなどを挟んで柏餅のように二つ折りにしたもの。◇日本独自の洋菓子とされる。東京都墨田区両国にあった洋菓子店「米津凮月堂」(現・東京凮月堂)を開業した米津松造の次男、恒次郎が1884(明治17)年~1890年のアメリカ・ロンドン・パリでの修行を終え、帰国後ウエハースにヒントを得、カステラのような生地にあんを挟んだものを考案、ワッフルの名で販売したとされる。
