Kettle

A type of water boiling device. As the character for kettle suggests, kettles were used to boil medicines in the past. It seems that kettles were already in existence in the middle of the Muromachi period. Later, a separate pot came to be used for boiling medicines, and from around the Edo period, kettles came to be used primarily for boiling water. During the Edo period, kettles were also called yukan.

At first, they were fitted snugly onto a stove such as a shichirin stove to boil water, so round-bottomed pots were the norm. Later, the heat source changed to gas or electricity, and for greater thermal efficiency, flat-bottomed pots became more common, as they prevented heat from escaping. They come in a variety of materials, including aluminum, anodized aluminum, stainless steel, enameled, and copper. They are similar in shape to kettles, but earthenware pots are called dobin and iron pots are called tetsubin. Kettles also come in a wide variety of designs and colors, and many are now called kettles.

湯沸かしの器具の一つ。やかんは「薬缶」と書くように、昔は薬を煎(せん)じるものであった。室町時代の中ごろにはすでにやかんはあったようである。のちに、薬を煎じるために別の鍋(なべ)が使われるようになり、江戸時代ごろからは、やかんは主として湯を沸かすものになった。江戸時代にはやかんは湯缶ともよばれた。

 初めは七厘などのこんろにすっぽりとはめて湯を沸かしたので、底の丸い形が一般的であった。のちに熱源はガスや電気にかわり、熱効率の点から熱の逃げにくい底の平らなものが多くなった。材質には、アルミニウム、アルマイト、ステンレス、ほうろう引き、銅などがある。形はやかんに似ているが土製のものは土瓶、鉄製のものは鉄瓶とよばれている。やかんもデザイン、色などが豊富になり、ケトルの名でよばれているものも多くなっている。
