A form of Chinese cuisine. It is a luxurious meal made with high-quality and rare ingredients, which is enjoyed over the course of two to three days. Ingredients used include elephant trunks, poisonous snakes, bird's nests, shark fins, and white fungus. It is so named because it brings together the best of Manchu and Han cuisine. It is said to have begun when the sixth emperor of the Qing dynasty, a Manchu dynasty, Qianlong visited Yangzhou near the Yangtze River and a wealthy man from Yangzhou cooked delicacies from the mountains and the sea in the Manchu style and presented them to him. The Yangzhou Huafang Lu, a record of the city's prosperity during the Qing dynasty, lists 49 types of dishes for the Manchu and Han banquet. 中国料理の一形態。高級で珍奇な材料を用いたぜいたくな料理を2〜3日かけて味わうもの。象の鼻,毒蛇,燕巣,フカのひれ,シロキクラゲといったものが使われる。満州族と漢民族の料理の粋を集めたところからこの名がある。満州族の王朝である清朝の第6代皇帝乾隆帝が,揚子江近くの揚州を訪れた際,揚州の富豪が山海の珍味を満州風に料理して献上したのが始まりとされる。清代の揚州の都市繁盛記である《揚州画舫(がぼう)録》によると,満漢全席として49種の料理が記載されている。
