A breed of dairy cattle. It has been bred and improved since ancient times in the Netherlands and the Holstein region of Germany. Females are large, weighing about 650 kg, and have black and white spotted coats. They produce a lot of milk, about 6,300 kg per year, but the milk fat content is low at 3.8%. Those in the UK are called Friesians and are somewhat smaller. They are suitable for drinking milk and as an ingredient in cheese. They are widely distributed in dairy countries around the world, and account for the majority of dairy cattle in Japan.

乳牛の一品種。オランダおよびドイツのホルシュタイン地方などで古くから飼養，改良されていた。雌で体重650kgくらいの大型で，毛色は黒と白の斑。乳量は年に6300kgくらいで多いが，乳脂肪は3.8％と少ない。イギリスのものは，とくにフリージアンと呼ばれやや小型。飲用乳，チーズ原料として好適。世界の酪農国に広く分布，日本の乳牛の大半を占める。
