A bundle of several kinds of herbs and aromatic vegetables tied with string or wrapped in gauze. It is made with thyme, bay leaf, and parsley stems as the base, and celery, leek, rosemary, sage, etc. can be added depending on the purpose, and the total amount can be adjusted as needed. It is often used as a flavoring for dishes that are simmered for a long time, such as stewed meat or fish, bouillon and other stocks, and sauces, and is boiled with other ingredients and removed when the aroma has been absorbed. 数種のハーブ(香草)と香味野菜を束ねて糸で縛るか，ガーゼで包んだもの。タイム，ベーリーフ，パセリの茎を基本とし，用途に応じてセロリ，ポロネギ(リーキ)，ローズマリー，セージなどを加え，全体の量は適宜加減する。多くは時間をかけて煮込む料理，例えば肉や魚の煮込み，ブイヨンなどのだし，ソースなどに香りづけとして用い，他の材料といっしょに煮て香りがついたところで取りだす。【辻静雄】
