Japanese: ふかのひれ(鱶の鰭) - ふかのひれ

It is an ingredient in Chinese cuisine, and is the second most luxurious item after bird's nest. It is originally a shark's fin, called yuchi in China, and customarily called fuka no fin in Japan. Neither bird's nest nor shark's fin has any taste in itself, but compared to bird's nest, shark's fin is more tolerant of other flavors, so it is often added to soups, and is also used in red-braised dishes, stewed in soy sauce-flavored broth. It is broadly divided into white-winged and black-winged, with white-winged sharks and white-tailed sharks, and black-winged sharks and blue sharks, respectively.

中国料理の材料の一種で，つばめの巣に次ぐ高級品。本来，サメのひれで中国では魚翅（ユイチー）と呼び，日本では習慣的にふかのひれと呼んでいる。つばめの巣もふかのひれも，そのもの自体に味はないが，つばめの巣に比べて，ふかのひれは他のものの味をよく受けつけるのでスープに入れるとよく，しょうゆ味の煮汁で煮込んだ紅焼にも用いられる。白翅と黒翅に大別され，白翅はメジロザメ，マブカザメ，黒翅はアオザメ，ヨシキリザメ，ネコザメからつくられる。
