肥育したガチョウの肝臓のこと。Foieは肝臓、grasは肥満したという意味。トウモロコシの餌(えさ)を強制的に食べさせ、運動させずに強制肥育して肝臓を太らせる。脂肪分が多く、約50%含み、滑らかな舌ざわりがある。キャビア(チョウザメの卵の塩漬け)、トリュフ(セイヨウショウロ)とあわせて世界三大珍味とよばれている。フランスのアルザス地方、ペリゴール地方が産地として有名。カモでつくったものもある。バターで炒(いた)めたり、パイ包み焼き、テリーヌなどにして食べる。フォアグラをペースト状にして中心にトリュフを詰めた缶詰もあり、これはそのまま薄く切って食べる。
