Sake from Nagano. The name of the sake comes from the fact that clear water springs from Iwafune, where the third-generation brewer was born. They offer a mellow daiginjo sake and a light, dry honjozo sake. The rice used is Yamada Nishiki and Shirakabanishiki. The brewing water is from underground water in the Izawa River system.
