It is also called "kou" and is also called "kou" or "steel". According to the ISO definition, it is iron with a carbon content of 2.0% or less (by weight), and contains trace amounts of silicon, manganese, phosphorus, sulfur, etc. as impurities. Steel with added alloy elements such as nickel and chromium in addition to carbon is called alloy steel, and steel with no artificially added elements other than carbon is called carbon steel. All mass-produced steels called ordinary steel are carbon steel. Carbon in steel exists as cementite (iron carbide, Fe 3 C), and steel at room temperature is usually pearlite, a eutectoid crystal of iron and cementite, when it contains 0.76% carbon. When the carbon content is less than 0.76%, cementite coexists with the base iron (ferrite), and when the carbon content exceeds 0.76%, cementite coexists with pearlite. In this way, the structure of steel changes depending on the carbon content and also on the temperature. Using the iron-carbon phase diagram, you can know the structure of steel according to the carbon content and temperature. Since the properties of steel depend on its structure, you can obtain steel with the desired structure and properties by adjusting the carbon content and heat treatment.

〈こう〉とも読み,鋼鉄,スチールともいう。ISOの定義では炭素含有量2.0%(重量)以下の鉄をいい,不純物として微量のケイ素,マンガン,リン,硫黄などを含む。炭素のほかニッケル,クロムなどの合金元素を添加したものは合金鋼といい,炭素以外の元素を人為的に加えていないものを炭素鋼という。普通鋼と呼ばれる量産鋼はすべて炭素鋼である。鋼中の炭素はセメンタイト(炭化鉄,Fe3C)として存在し,ふつう常温の鋼は炭素0.76%を含むとき,鉄とセメンタイトの共析晶であるパーライトとなっている。0.76%未満では地の鉄(フェライト)にセメンタイトが,0.76%を越えるとパーライトにセメンタイトが共存する。このように鋼の組織は炭素含有量によって変わり,また温度によっても変化する。鉄‐炭素状態図を利用すると,炭素含有量および温度に応じた鋼の組織を知ることができる。鋼の性質はその組織に左右されるから,炭素量の調整や熱処理によって所望の組織・性質の鋼を得ることができる。
